Hey Badgers! Now that the semester is in full gear and we’re all stressed about the piling school work (we left it to the last minute AGAIN, even though we promised we wouldn’t), food is something that often gets overlooked.

Either we tend to eat tons of junk food (you’re not a university student if you haven’t had at least one meal where you ate 3000 calories #McDonalds) or eat very little and don’t fuel our bodies for our long and busy days!

So in order to resolve this issue, I want to share with you some easy, fast, and somewhat-healthy lunch ideas that you can bring with you to school or work!

#1 – Bagels

Who doesn’t like bagels? If you don’t, you just haven’t found the right kind. The best part: you can customize your bagel any way you like.

Sweet tooth? Get a blueberry bagel, spread cream cheese and top it with some extra blueberries or fruits on top!

Salty and savory? Get your favorite kind of bagel, spread whatever sauce you prefer, add your choice of protein, some veggies, and your favourite condiment (if you like spicy, I recommend Sriracha). Super easy!

#2 – Overnight Oats

I love this recipe because it can be used for either breakfast or lunch!

Take your favourite kinds of oats (quick-oats are cheapest) and pour them into a container, pour enough liquid (milk, almond milk, soy milk etc..) to the consistency that you like, then add toppings!! For toppings I recommend peanut butter, fruits and cinnamon! Leave it in your fridge overnight, and voila!

#3 – Chickpea Salad

If you like chickpeas and savory foods, this is the recipe for you! It can also be vegan and vegetarian depending on what you add!

Get a can of chickpeas and drain them, you can then add whatever seasoning or toppings you like. I prefer sriracha (#bestcreationever), cajun seasoning and a hint of lemon! However, you can also add feta cheese and lettuce! The options are basically endless, and the best part is that chickpeas are super filling!

#4 – Classic PB&J

 This needs no explanation and is a classic and fast lunch idea!

#5 – Chicken Salad Wrap

Wraps are so easy to make and super customizable! My favourite is a chicken salad wrap, however, you can always make yours vegan or vegetarian.

Make some grilled chicken (for a vegetarian option use Portobello mushrooms!) and chop it into small pieces, add the chicken to a concoction of Greek yoghurt (can substitute for hummus), salt, pepper, your choice of seasoning, and lemon juice. You can also add veggies like tomatoes, avocados and lettuce. Add this “chicken salad” to your tortilla wrap and top with your favourite sauce or condiment (I prefer sriracha…are you sensing a theme here?).
