Hey Badgers! Starting Reading Week off with a cooking idea!
When was the last time you ACTUALLY prepared a meal and enjoyed it? As a freshman I’ve had to adapt to a different lifestyle. Since I’ve lived at home all my life, I got accustomed to having my mom prepare each meal everyday: I’d wake up in the morning and lunch would be packed and ready to go PLUS breakfast for the go. Talk about spoiled…
For me, being at Brock meant moving away from home, renting a room in a student house, bussing to school on the daily, doing my own laundry, and yes… COOKING! It really challenged me to take initiative to want to put effort into eating a healthier and balanced diet without my parents always nagging me. “Did you eat your vegetables” … yeah… that.
Let’s be honest, I’d be lying if I said I never binged at McD’s or bought a snack pack of Timbits for myself…besides the point, spinach is a versatile ingredient that there are TONS of recipes for. Add it to an omelet, make a salad, steam it with some salt and pepper for your veggie portion in your meal, and the list goes ono.
Here’s a quick and easy spinach side dish you can add to any meal. Make it your own and be creative! Cooking can be fun, just have your end goal in mind, and don’t be afraid to spice things up here and there.
Here’s what you’ll need:
– 2 cups spinach
– 3/4 sliced mushrooms
– 1/2 medium-sized onion
– 2 garlic cloves
– 3 tbsp olive oil or vegetable oil
– 2 tsp Sriracha sauce (or hot sauce of your preference)
-salt & pepper to taste
*I added some dried barely.
Again, feel free to change it up! Add more spinach, add meat if you want to, steam the spinach instead of sautéing it, bust most importantly, ENJOY!
